Surface mounting suits finished work and runs that may move
Retrofits, rentals and anything on a finished surface. If the drywall is painted and the cabinets are hung, surface mounting gets the light in without opening anything.
It is also right where the run might move. Shelving that gets reconfigured, a workbench that changes layout, a seasonal display: all favor something you can unscrew and relocate. A surface channel keeps the strip, the connections and the feed reachable.
Under a cabinet or along a shelf edge there is nothing to recess into, so the channel does the job. Recessing removes the fixture from the room
Anywhere the fixture would compete with the architecture. A perimeter slot in a ceiling, a groove in a stair stringer, a channel let into a headboard panel: only recessing gives you light without an object.
Recessing also keeps the run out of the way of doors, luggage and hands.
Once the groove is cut, the run is where it is. Recessed channel installation covers the fitting detail, and a trimless channel mudded into the surface goes further still, with less room for a change of mind.
The substrate decides surface channel or recess the strip
Sort it in order.
Is the surface already finished? If yes and it is drywall or plaster, surface mount unless you have a real reason to open the ceiling. Cutting a slot there means framing, existing wiring and possibly plumbing behind the line. Structural work goes to the appropriate trade, and any line voltage in that cavity goes to a licensed electrician under the manufacturer instructions, local code and the NEC.
Is it joinery you are still building? Recess it. Cutting a groove into a panel on the bench is quick and repeatable.
Does the light need to read as a fixture or as an edge? A slim visible body is a legitimate choice; if you want no object, recess.
If anything here might change, surface mount.
What a channel does and does not do
An aluminum channel gives the strip a rigid mounting, a lens to sit behind and metal in contact with the tape, which helps dissipate the heat a strip produces in normal use. A run inside a closed cavity or a deep recess sits warmer than the same product in open air, so the published thermal guidance still applies (check how thermal derating works if the location is enclosed).
A channel is not mandatory. Plenty of runs go in without one, and the choice depends on location, strip and the look you want.
Mounting method does not touch the electrical side. A 24V strip still needs a 24V driver and a 24V controller behind it, and a 12V strip needs 12V hardware throughout.
On dots, be realistic. A channel with a diffusing lens reduces but does not guarantee the removal of visible dots. How visible they are depends on LED density, how deep the strip sits below the lens, and which lens you use. Judge it per product.
